Ingredients:

  • 6 dl cold milk
  • 1 kg wheat flour
  • 150 g sugar
  • 3 tsp flaky salt
  • 12 g cardamom (about 3 tsp), preferably coarsely ground from whole pods
  • 50 g fresh red yeast or 1 packet of dried yeast
  • 1 egg
  • 150 g room temperature butter, cut into cubes

For brushing:

  • 1 egg

For filling:

  • 200 g dark chocolate, chopped into pieces or a mix of milk chocolate and dark chocolate

Instructions:

  1. Place 5 dl of milk in the mixing bowl along with the flour, sugar, salt, cardamom, yeast, and egg. Mix on a slow speed for 3 minutes.
  2. Increase the speed and gradually add the remaining milk. Knead for 8 minutes until the dough is smooth and elastic.
  3. Lower the speed and add the butter. Let the machine run at a slow speed until all the butter is incorporated. Add the chocolate at the very end and let the machine run for a few more seconds to evenly distribute the chocolate.
  4. Cover the mixing bowl with a damp towel and let the dough rise for about 1 hour.
  5. Transfer the dough onto a lightly floured countertop and divide it into pieces weighing about 70 grams each. Shape them into round buns.
  6. Place the buns on a baking sheet lined with parchment paper. Cover with a damp towel and let them rise until they have doubled in size.
  7. Beat the egg in a small bowl and brush the buns with the egg.
  8. Bake the buns at 230°C (445°F) with top and bottom heat, in the middle of the oven, for 10-15 minutes until they are golden brown.

Enjoy your delicious chocolate buns!
