A perfect start to the new year. Easily made in a few minutes and steaming hot straight from the blender.
Healthy, fresh and packed with C vitamins. The whole almonds make the soup creamy and good.
This is what you need:
- 5 dl cold water
- 1 orange
- 350 gr carrots
- 1 small onion
- 1-2 cloves of garlic
- 3 cm fresh ginger
- 1 red chilli (can be dropped)
- 2 stock cubes, chicken or vegetable stock
- 1 dl almonds
Flavour with:
- salt
- pepper
- coriander
How to do it
- Peel all vegetables and cut into coarse pieces. Peel the orange, garlic clove and ginger.
- Pour water into the blender and add all the other ingredients.
- The blender can easily grind all large pieces, a whole orange and whole almonds.
- Put the lid on tightly and turn the blender on the heating program.
- Let blender run until the program stops.
- Season with salt and pepper and serve warm soup straight from the container.
- Serve with fresh coriander and preferably some extra coarsely chopped almonds.
