Blender muffins

Blender muffins

Make the muffin batter right in the blender, easy, slightly healthier and very good.

This is what you need

About 10 pieces

  • 4.5 dl lightly cooked oatmeal (for gluten-free muffins you can use gluten-free oatmeal)
  • 1 ½ tsp baking powder
  • 1 pinch of salt
  • ½ tsp cinnamon
  • 2 large eggs
  • 2 large ripe bananas
  • 1 apple
  • 4 tablespoons of maple syrup
  • ½ tsp vanilla powder or extract
  • 50 g coarsely chopped dark chocolate

How to do it

  1. Preheat the oven to 175 degrees
  2. Put all the ingredients except chocolate in the blender.
  3. Blend together with the smoothie program to a smooth batter.
  4. Do not blend for too long, because then the muffins can become chewy. Just long enough until the batter is even and smooth.
  5. Have paper muffin tins in a metal tin. Divide the batter into the molds ¾ full.
  6. Top them with chocolate and push the chocolate a little into the muffins.
  7. Bake in the middle of the oven for approx. 15-20 min.
  8. Check with a grill stick or toothpick and stick it in the middle of a muffin. If it comes out dry or with slightly moist crumbs on it, they are ready.
  9. Cool on a wire rack.
