Pizza dough:
- 5 g fresh yeast
- 5 dl cold water
- 780 g wheat flour (13 dl) (preferably Tipo 00 flour or special wheat flour)
- 20 g flake salt
- (A little olive oil to grease the tray or plate with)
How to do it:
- Pour yeast, water and flour into the bowl of the kitchen mixer and run on low speed for 3 minutes, increase the speed to medium for 5 minutes. Add salt and knead for another 5 minutes.
- Divide the dough into 12 pieces (approx. 110 g each) and roll them out or fold them towards the bottom several times so that dense buns are formed.
