Hummus

Making a wonderfully smooth and creamy hummus is surprisingly easy, especially if you have a good immersion blender like the Prostick.

Ingredients

  • 400 g tinned chickpeas
  • 2 garlic cloves
  • 2 tbsp tahini
  • A handful of fresh coriander
  • 50 ml olive oil
  • Juice of 1 lemon
  • Flaky sea salt
  • Water, as needed for preferred consistency

To serve

  • A little olive oil
  • Finely chopped fresh coriander
  • 1 tsp paprika

How to make hummus with an immersion blender

  1. Prep the base
    Drain and rinse the chickpeas thoroughly. Place them in a large measuring cup or the chopper attachment of your immersion blender. Add the garlic, tahini, olive oil and lemon juice.
  2. Blend until smooth
    Blend until completely smooth and creamy. If needed, stop and scrape down the sides to ensure an even texture.
  3. Adjust consistency
    If the hummus is too thick, add a small amount of water and blend again until you reach your preferred consistency.
  4. Season to taste
    Add flaky sea salt to taste and blend briefly to combine.
  5. Finish & serve
    Transfer the hummus to a serving bowl. Drizzle with a little olive oil and sprinkle with paprika and finely chopped coriander for extra flavour and colour.

Tips:

  • Swap coriander for parsley or leave the herbs out for a classic version.
  • Add a pinch of cumin or smoked paprika for extra depth.
  • For ultra-creamy hummus, warm the chickpeas briefly before blending.
