Yoghurt granola bars

These granola bars made of dates and nuts with yoghurt and berry jam are perfect as a quick breakfast, snack or on a brunch spread.

Ingredients

  • 2.5 dl dates
  • 0.5 dl cashew nuts (or oats for nut-free)
  • 1 dl oats
  • 1 tbsp peanut butter (or rapeseed oil for nut-free)
  • A pinch of cinnamon
  • 3 dl thick natural yoghurt

Berry jam

  • 100 g (1.5 dl) blueberries
  • 200 g (4 dl) raspberries
  • 1 tbsp chia seeds

How to make yoghurt granola bars

  1. Blend the base
    Blend dates, nuts and oats into a soft paste using the mini chopper.
  2. Flavour & press
    Add peanut butter or oil and season with cinnamon. Press into a small dish (about 15x25 cm or a 22 cm round tin).
  3. Make the jam
    Warm the berries in the microwave until soft, stir in chia seeds and blend to a smooth jam. Save a few berries for garnish.
  4. Layer
    Spread about two-thirds of the jam over the base, then the yoghurt. Spoon the rest of the jam on top in swirls and garnish with berries.
  5. Chill & serve
    Freeze for a few hours. Cut into bars once firm. Store in the freezer, but take out about an hour before serving. The yoghurt layer holds its shape after defrosting in the fridge.

Tips:

  • For nut-free bars, use oats instead of cashews and rapeseed oil instead of peanut butter.
  • Add a dash of vanilla to the yoghurt for extra flavour.
  • Line the dish with baking paper for easier lifting and clean cuts.
