Apple cake

A classic apple cake that is easy to make and always a crowd-pleaser. Juicy apples, a hint of cinnamon and a crunchy sprinkle of almonds make this cake a favourite, perfect with vanilla ice cream or whipped cream.

Ingredients

  • 150 g butter
  • 150 g sugar
  • 3 eggs
  • 150 g plain flour
  • 1 tsp baking powder
  • 1 tsp vanilla sugar (or vanilla extract)
  • 3 large apples
  • ¼ – 1 tsp ground cinnamon
  • Flaked almonds (optional)
  • Pearl sugar (optional)

To serve

  • Vanilla ice cream or whipped cream

How to make apple cake

  1. Cream
    Cream the butter and sugar until light and fluffy. Beat in the eggs, one at a time.
  2. Combine
    Mix the dry ingredients and fold them into the batter.
  3. Prepare the tin
    Grease a springform tin (18–20 cm). Spread two-thirds of the batter evenly over the base.
  4. Apples & cinnamon
    Peel and wedge the apples. Arrange over the batter and sprinkle with cinnamon.
  5. Finish the top
    Dot the remaining batter over the apples. Sprinkle with flaked almonds and, if you like, a little pearl sugar.
  6. Bake
    Bake at 175°C for 45–60 minutes, until the apples are soft and the cake is baked through. Check with a skewer—if it comes out clean from the centre, it’s ready.
  7. Cool & serve
    Leave to cool on a wire rack. Serve warm with vanilla ice cream or a dollop of whipped cream.

Tips:

  • Use tart, firm apples for the best flavour and texture.
  • For extra crunch, add a spoon of pearl sugar on top before baking.
  • If the top browns too quickly, tent loosely with foil for the last 10–15 minutes.
