Fluffy chocolate buns worth showing off

Ingredients
- 6 dl cold milk
- 1 kg wheat flour
- 150 g sugar
- 3 tsp flaky salt
- 12 g cardamom (approx. 3 tsp), coarsely ground
- 50 g fresh red yeast or 1 packet dried yeast
- 1 egg
- 150 g butter, room temperature, cubed

Instructions
- Add 5 dl of milk, flour, sugar, salt, cardamom, yeast, and egg to the mixing bowl. Mix on low speed for 3 minutes.
- Increase the speed and gradually add the remaining milk. Knead for 8 minutes until smooth and elastic.
- Reduce speed and add the butter. Mix until fully incorporated. Add chocolate and mix briefly to combine.
- Cover with a damp towel and let the dough rise for 1 hour.
- Transfer to a floured surface. Divide into ~70 g pieces and shape into buns.
- Place buns on a tray with parchment paper. Cover and let rise until doubled in size.
- Beat the egg and brush the buns.
- Bake at 230°C (445°F), top/bottom heat, middle of oven, for 10–15 min until golden.
