Taco waffles? Really? Yep! If you think about it, a wheat tortilla contains almost the same ingredients, apart from egg and baking powder. But taco waffles are a fun twist that makes the meal go further. Perfect if you want your taco leftovers to stretch to an extra meal. Great for lunch or another easy dinner.

Feel free to put the waffle maker on the table and cook while everyone is sitting together.

Ingredients

  • 3 dl plain flour
  • 1 dl oats
  • 2 eggs
  • 4 dl milk
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/2 tsp baking powder

How to make taco waffles

  1. Melt the butter
    Melt the butter and set it aside.
  2. Mix the batter
    Mix the dry ingredients, then stir in the melted butter, eggs and milk until you have a smooth batter with no lumps. You can also use a hand mixer or a ProBaker to mix the batter.
  3. Prepare the filling
    Place the waffle maker and the batter on the table together with your taco leftovers. If you have seasoned minced beef or black beans left from the day before, heat them in a frying pan.
  4. Cook the waffles
    Make the waffles at the table until golden and ready to serve.
  5. Serve
    Eat them warm, topped with the taco leftovers.
