Tomato soup with red curry paste

A simple, tasty tomato soup that is made ready warm in the blender.

This is what you need

  • 1 tin canned tomatoes
  • 2-3 cloves of garlic
  • 1 medium hot red chili (taste beforehand how hot it is)
  • 1 can of coconut milk
  • 700 g carrots
  • Neutral oil
  • 5 - 6 tsp red curry paste
  • 5 dl stock, broth or vegetable stock or stock
  • 1 tsp honey
  • 1/2 lime

Taste with

  • salt
  • pepper
  • basil

How to do it

  1. Peel the carrots, garlic and lime. Remove the seeds from the chilli, if you want extra strong flavour, you can take them with you.
  2. Pour the ingredients into the blender.
  3. Set on soup program.
  4. Use the tamper to help push down large chunks at the very beginning of the dazzle.
  5. Let blender run until the program stops.
  6. Season with salt and pepper and serve warm soup straight from the container.
  7. Serve with fresh basil and preferably with fresh mozzarella cheese.
