Recipe for hot carrot soup - made in the blender
This is what you need:
- 400 g (5 pcs) carrot
- 250 g sweet potatoes
- 2 oranges
- 10 g fresh ginger
- 2 g red chili
- 5 g (1 clove) garlic
- ½ lemon (juice)
- 3 g turmeric (fresh or dried)
- 7 g salt
- 2 g black pepper
- 280 g chicken broth*
- 70 g (1 dl) cream
- 20 g (1 tablespoon) olive oil
- 100 g crème fraiche
- 100 g salt-roasted seeds
* 1 bouillon cube in 280 g of water may be used.
This is how you do it:
- Peel carrot, sweet potato, oranges, ginger, turmeric and garlic.
- Coarsely chop all the vegetables.
- Put the pre-peeled and chopped ingredients in the blender together with chilli, salt, pepper, chicken stock and cream.
- Squeeze the juice from half a lemon.
- Start the soup program on the blender and wait until the program is finished.
- The soup is piping hot and ready to serve.
- Taste the soup and top with olive oil, a dollop of crème fraiche, a little extra black pepper and roasted seeds.
