This coffee ice cream is a perfect refreshment for the coffee lover.
With an ice cream machine, you get an absolutely fantastic consistency on the ice cream and there are no restrictions on the flavors you can make when the ice cream is homemade. Ice cream "drowned" in strong coffee, affogato, is an Italian classic. With mocha ice cream and freshly brewed funnel coffee, this classic has been given a Scandinavian twist.
4-6 portions
Ingredients:
- 2.5 dl cream
- 2.5 dl whole milk
- 100 g of sugar
- 1 tsp vanilla sugar with real vanilla
- 4 egg yolks
- 3 tablespoons strong cold coffee
- 2 tbsp cocoa
- 150 g dark chocolate
- 50 g coarsely chopped dark chocolate
- Freshly brewed and powder-strong funnel coffee for serving.
How to do it:
- Heat milk and cream in a heavy-bottomed saucepan until steaming.
- Whisk the egg yolks, sugar and vanilla sugar together. Then whisk in little by little the warm milk.
- Pour the mixture back into the pot and stir in the coffee, cocoa and 150 g of chocolate. Heat while stirring on medium heat for 8-10 minutes until it thickens. It must not boil.
- Pour it into a bowl, cover with plastic wrap and chill in the fridge.
- Make the cream into ice cream in an ice cream machine and add the chopped chocolate towards the end of the freezing process.
- Put in a plastic box and put in the freezer for at least 3 hours before serving.
- Have ice cream in a warm glass, cup or bowl. Pour on hot and strong funnel coffee, and enjoy immediately.
