Waffle cake (waffle tower) is a cake that is super quick to make if you have unexpected guests, or if you just love waffles, as we do. Once the waffles are fried, it only takes 5 minutes to prepare the rest. Here you can use a sea of ​​different creams, fruit and berries on the waffles. Lemon cream, vanilla cream, rum cream, passion fruit cream and the like. Cut up whatever fruit you like, and wear it together with lots of good berries and herbs. A good variation is raspberries, blueberries and lemon verbena until 17 May.

This is what you need

  • 2 eggs
  • 1 dl sugar
  • 2 dl cream
  • 1⁄2 dl H-milk
  • 1 dl water
  • 350 g flour
  • 125 g melted butter
  • 1⁄2 tsp baking powder
  • 1 glass of passion fruit curd
  • 1 box of whipped cream (0.3 dl)

For decoration

  • Mango
  • Kiwi
  • Grapes
  • Pomegranate
  • Blueberries
  • Fresh grated coconut
  • Mint
  • Passion fruit

How to do it

  1. Whisk together eggs.
  2. Put in the sifted flour, the rest of the ingredients and mix well.
  3. Fry the waffles in the waffle iron until they are crispy and golden.
  4. Whip the cream until light and fluffy.
  5. Mix the cream with the passion fruit curd
  6. Keep the cream cold while you cut the fruit.
  7. Cut the fruit you want to wear. We have listed a bunch of good suggestions, but here it is your imagination that puts an end to what you can use.
  8. Stack the waffles with cream and fruit in between Garnish with fruit, berries and herbs you like.
