Recipe for focaccia, baked in a pizza oven.
It's not just pizza that can be baked in a pizza oven! A thin focaccia also works brilliantly. Serve with a good homemade aioli, together with tapas or as a sandwich as in this recipe.
Focaccia:
- 2.5 dl cold water
- ½ pk pizza yeast
- 400 g wheat flour, preferably tipo 00
- 1 tablespoon olive oil
- 1 1/2 tsp flake salt
How to do it:
- Put all the ingredients except the salt in the ProBaker's baking bowl, and knead together at low speed for 10 minutes.
- Add salt and knead for another 2 minutes. Cover the bowl with foil or a towel and let rise until doubled in size, approx. 1 hour.
Turn the dough into a small ovenproof dish that has been greased with olive oil. Put a little oil on your hands and squeeze the dough out into the mould. Cover the tin with plastic wrap and let rise until doubled in size.
Topping:
- ½ dl olive oil
- 1 branch fresh rosemary
- Handful of pitted olives
- 2-3 tsp flake salt
- Durum wheat for baking
How to bake the focaccia:
- Preheat the pizza oven for at least 15 minutes so that the pizza stone is nice and warm.
- Have plenty of durum wheat on the counter and roll the dough into the flour. Pour oil over the dough and make small holes in the dough with your fingers.
- Stick fresh rosemary and olives into the dough.
- Put the pizza spatula under the dough and lift into the oven.
- Reduce heat to medium to low and cook for 1 minute or less.
- Take the focaccia out of the oven, turn it 180 degrees on the spatula and put the bread back in the oven.
- Continue to turn the focaccia regularly during the baking time.
- Bake until the bread is golden and makes a hollow sound when tapped.
- Cool on a wire rack.
- Cut the focaccia into pieces and serve as a sandwich.
Serving until 2.
Chicken sandwich:
- 4 writes bacon
- 1-2 chicken breasts
- Salad
- Aioli
- 1 sliced avocado
- Salt and pepper
How to make a chicken sandwich:
- Fry the chicken breasts in butter and olive oil.
- High heat on both sides for a couple of minutes, then medium heat until the chicken breasts are cooked through.
- Season with salt and pepper and set aside.
- Fry the bacon until crispy, cut the chicken breasts into slices and make a sandwich with chicken, bacon, aioli, avocado and salad.
