Recipe for green pea soup, a quick and cheap dinner.
You will be looking for a faster everyday soup for a long time. Delicious, healthy, cheap and bright green.
Ingredients:
- 1 large onion or 2 small
- 1 tbsp olive oil
- 3 cloves of garlic
- 2 stock cubes, vegetable or chicken
- Approx. 7 dl water
- 500 g frozen peas
- 1 handful of fresh mint
- 2-3 sprigs fresh thyme
- Salt and pepper to taste
- A little lemon juice, approx. 1 tbsp.
Topping:
- Some sliced almonds
- Creme fraiche
- Fresh mint
How to do it:
- Saute onion until soft in oil. Fry the garlic in the pan for a couple of minutes, but avoid colouring.
- Put in the blender with the other ingredients and run together on the soup program until the soup is piping hot.
- Toast sliced almonds on medium heat in a dry frying pan. Top the soup with almonds, creme fraiche and fresh herbs.
- Serve with good bread on the side, preferably some butter-fried sourdough bread.
