Recipe for green pea soup, a quick and cheap dinner.
You will be looking for a faster everyday soup for a long time. Delicious, healthy, cheap and bright green.
Ingredients:
- 1 large onion or 2 small
- 1 tbsp olive oil
- 3 cloves of garlic
- 2 stock cubes, vegetable or chicken
- Approx. 7 dl water
- 500 g frozen peas
- 1 handful of fresh mint
- 2-3 sprigs fresh thyme
- Salt and pepper to taste
- A little lemon juice, approx. 1 tbsp.
Topping:
- Some sliced almonds
- Creme fraiche
- Fresh mint
How to do it:
Saute onion until soft in oil. Fry the garlic in the pan for a couple of minutes, but avoid colouring.
Put in the blender with the other ingredients and run together on the soup program until the soup is piping hot.
Toast sliced almonds on medium heat in a dry frying pan. Top the soup with almonds, creme fraiche and fresh herbs.
Serve with good bread on the side, preferably some butter-fried sourdough bread.
