How to make strawberry ice cream
-
Heat the milk
Put the milk and cream in a saucepan. Split the vanilla pod and add both the seeds and the pod to the pan. Bring to the boil. -
Infuse
Take the pan off the heat and let the vanilla infuse while the mixture cools. When it has reached room temperature, remove the vanilla pod. -
Whisk the yolks
Whisk the egg yolks and sugar until thick and pale. Stir the vanilla milk into the egg mixture. -
Purée the strawberries
Hull the strawberries and purée them finely with a blender or stick blender. Stir the strawberry purée into the ice cream mixture. -
Churn
Pour the strawberry mixture into the ice cream maker and churn until it has turned into soft strawberry ice cream. -
Serve
Serve straight from the ice cream maker if you like your ice cream soft. For a completely firm ice cream, transfer it to a container and freeze for 1–2 hours before serving.
How to make strawberry sauce
-
Simmer
Put strawberries, sugar, the juice of half a lime and boiling water in a saucepan. Simmer over low heat until the sugar has dissolved. -
Blend
Blend with a stick blender or blender until smooth. Add more sugar to taste and chill the sauce in the fridge until serving.
Tips:
- Use sweet, tasty strawberries for the best strawberry flavour.
- You can also use frozen strawberries – thaw them first, then weigh out the correct amount.
- The strawberry ice cream is great just as it is, without any accompaniments!
