Making delicious mango sorbet is a breeze if you have an ice cream maker in the house.
This is what you need
- 1 dl sugar
- 1 dl water
- 1 tablespoon glucose (optional, but the glucose gives an even more elastic and flexible consistency to the finished sorbet)
- 450 g about 2-3 Pakistani mangoes or regular ripe mangoes
- Juice of 1 lemon
How to do it
- Boil water, sugar and glucose, and stir until the sugar has dissolved.
- Cool in the fridge.
- Put mango flesh, juice from 1 lemon and half of the sugar syrup in a blender.
- Blend until completely smooth and taste. If it needs more sweetness, you can add the rest of the syrup.
- Switch on the ice machine and pour in the mango pulp while the machine is running.
- Let the machine run until the sorbet is completely frozen and transfer it to a plastic box or metal form.
- Cover with plastic wrap or a lid and refrigerate for an hour or more before serving.
Hint! Serve it with a sprinkling of edible flowers such as carnations from the garden and lilacs, as is done here.
