Protein Waffles

Protein waffles made with cottage cheese, oats and grated carrot – rich in protein and fibre, moist and delicious.

Ingredients

Makes about 10 waffles

  • 350 g cottage cheese
  • 4 eggs
  • 200 ml oats
  • 3 tbsp sugar
  • 400 ml milk
  • 200 ml wholemeal flour, sifted
  • 1 tsp baking powder
  • A pinch of salt
  • 3 tbsp melted butter or margarine
  • 200 ml finely grated carrot

How to make protein waffles

  1. Make the base
    Place the cottage cheese, eggs and oats in a food processor, blender or the measuring cup of an immersion blender. Blend until smooth and thick.
  2. Prepare the batter
    Transfer the mixture to a bowl, add the remaining ingredients and whisk until you have a smooth, lump-free batter. Leave to rest for at least 20 minutes.
  3. Cook the waffles
    Heat the waffle iron and lightly grease with butter. Use the ladle provided to add the right amount of batter. Cook the waffles until golden and place on a wire rack.
  4. Serve
    Serve warm with your favourite toppings, such as brown cheese and blueberries, soured cream and jam, or anything else you fancy.

Tips:

  • Swap grated carrot for grated apple or zucchini for a different twist.
  • For extra crunch, add a handful of chopped nuts or seeds to the batter.
  • Make the waffles in advance and freeze – perfect for busy mornings.
