Material: the knives are slim knives with a steel quality that makes it possible to sharpen at an acute angle, which gives a unique sharpness. The material has been specially developed by the manufacturer 18 steel. stands for the composition of the ingredients in the steel: Chromium, Molybdenum and Vanadium. 18 stands for the percentage of chromium in Yoshikin's steel. Knife steel always contains carbon and chromium. It is the proportion of coal that is decisive for the hardness of the steel. Chromium is added to make the steel durable and prevent rust. Sandvik 12C27™ steel is resistant to both rust, stains and corrosion.
