Avocado jam

A lovely round, mild and rich flavor combination of coconut, citrus and avocado.

This is what you need

  • 1.5 large avocados (2 medium)
  • 2 dl coconut milk
  • 2 tbsp agave syrup or acacia honey
  • ½ lime
  • 1.5 dl heavy cream

How to do it

  1. Peel the avocado and put it in the blender with the coconut milk, the agave syrup and the juice of ½ a lime.
  2. Make everything into a nice mass, and put it in a small baking bowl.
  3. Whisk the whipped cream until creamy, and fold it into the avocado mixture.
  4. Pour the mixture into the ice cream maker.
  5. Put the ice cream in the freezer when it's done.
