Mint ice cream with chocolate chips

Refreshing and good ice cream.

A classic with fresh mint. It gives a wonderful fresh taste.

This is what you need

  • 5 dl heavy cream
  • 2.5 dl milk
  • 3 egg yolks
  • 150 gr sugar
  • 60 gr mint leaves
  • 1/4 tsp salt
  • 1 dl chopped chocolate

How to do it

  1. Put the cream and the milk in a solid saucepan. Heat it gently to boiling point. Pull the pot aside and add the mint leaves. Let it soak for approx. 60 min.
  2. Strain the mint milk and discard the mint leaves that remain in the strainer.
  3. Put the mint milk over the heat again and heat it up gently. Do not let the milk boil!
  4. Mix egg yolks, sugar and salt in a bowl.
  5. Stir the warm mint milk into the egg mixture.
  6. Pour everything back into the pot. Put on medium heat on the plate and stir until it thickens. Make sure it doesn't boil!
  7. Strain the entire mixture and allow it to cool before pouring into the ice cream machine.
  8. Pour everything into the container of the ice cream machine and start it. After approx. After 1 hour, the ice cream is finished and ready to serve.
  9. Serve with a good cup of coffee. If there is any left over, it can be stored for a while in the freezer.
