If you haven't tasted salted caramel ice cream before, you're really missing out. This is an upgraded version of the old smørbukk ice cream. The only tip we can give you here is to make NOK! Because this one is going to have legs to walk on.
This is what you need
- 3 dl cream
- 2 dl milk
- 100 g of sugar
- 5 egg yolks
- salt
- 100 g walnuts
- 100 g of sugar
How to do it
Salted Caramel Ice Cream
- Melt the sugar to caramel in a saucepan, taking care not to burn it.
- When it has become caramel, add cream little by little while stirring to mix it properly.
- Then add the milk and bring it all to a boil.
- Stir together the egg yolks in a bowl, add the milk and cream mixture in a steady stream while stirring well.
- Pour the batter back into the pot and heat, stirring with a wooden spoon, until it thickens like a custard.
- Taste with a little salt in the batter to get that salty caramel flavor that is so good.
- Strain the mixture and put it in Vanilla ice cream machine ICM-C15 or Vanilla ice cream machine ICMSB-C15.
- The ice cream is kept in the freezer for serving.
Walnut croissant
To make walnut crokan, melt the sugar into caramel. When it is golden and nice, fold in the nuts, and the nut caramel is poured onto a baking tray lined with baking paper. When the nut caramel has cooled, it is chopped into coarse pieces that are sprinkled over the ice cream when serving.
Hook tips
The most important thing to remember is to make enough. If you really like the crokan, make twice as much and put half in the ice cream machine when the ice cream is half ready. Then it will be evenly distributed.
