Scones made in Airfryer

Are you out of bread for Sunday breakfast or lunch? It’s quick to whip up a scone dough and bake in the air fryer. In this recipe, we used the Dualfry with a chamber that can be divided in two, so scones can bake in one chamber while peach slices bake in the other.

Ingredients:

  • 250 g all-purpose flour
  • 50 g sugar
  • 1 tsp vanilla sugar
  • 1 tsp baking powder
  • ½ tsp flaky salt
  • 100 g cold butter
  • 1.2 dl heavy cream, plus extra for brushing
  • 1 egg

Instructions:

In a bowl, combine the flour, sugar, vanilla sugar, baking powder, and salt. Cut the cold butter into cubes and add to the dry ingredients. Crumble together by hand or use the dough hooks of a hand mixer until the mixture resembles coarse breadcrumbs.

In another bowl, whisk together the cream and egg with a fork. Pour the wet mixture into the dry ingredients and gently fold with a spoon or spatula just until it forms a dough. Do not overmix.

Transfer the dough to a lightly floured surface and gently bring it together. Roll out the dough until it is about 2 cm thick and cut out round scones using a cookie cutter or a glass with a 5-7 cm diameter. You can also cut the dough into triangles with a knife. Gather any leftover dough and repeat the process.

Place the scones in the air fryer basket. How many scones fit will depend on your air fryer model. If you have a smaller model, bake them in batches, leaving some space between each. Brush the scones with cream and bake at 180 degrees Celsius for 12-15 minutes, until golden brown.

If you have an air fryer with two chambers or a divided chamber, you can bake nectarines or peaches at the same time. Place some parchment paper in the other chamber and add nectarines or peaches cut into slices. Sprinkle with light brown sugar, about 2 tsp per nectarine/peach. Cut a couple of slices of cold butter with a cheese slicer and place them on top of the fruit. Bake until the fruit is soft and the sugar has caramelized.

Cool the scones on a wire rack for a few minutes before serving.

Serve with baked peaches and cream, or with butter and a good jam.
