Beetroot waffles

Beetroot waffles are a colourful and tasty twist on classic waffles. Made with beetroot, honey and vanilla, they turn out soft, slightly sweet and perfect for everything from breakfast to an afternoon treat.

They are easy to make and a lovely way to add both colour and flavour to your waffle baking.

Ingredients

  • 2 medium beetroot, pre-cooked or baked until tender in the oven or air fryer
  • 2 eggs
  • 2 tbsp melted butter
  • 2 tbsp honey
  • 3 dl milk
  • 2 tbsp brown sugar
  • 3 1/2–4 dl plain flour
  • 1 tsp baking powder
  • 1 tsp vanilla sugar or vanilla extract to taste

How to make beetroot waffles

  1. Blend the beetroot
    Peel and cut the beetroot into pieces, then place them in a blender.
  2. Add the wet ingredients
    Add the eggs, melted butter, honey and milk, then blend until smooth.
  3. Make the batter
    Add the dry ingredients and blend into a smooth, lump-free batter. Do not blend for too long, as this can make the waffles tough. The amount of flour may vary slightly depending on the size of the beetroot. Start with 3 1/3 dl plain flour and add more if the batter seems too thin.
  4. Let the batter rest
    Leave the batter to rest for around 10–15 minutes.
  5. Cook the waffles
    Cook in the waffle maker over fairly high heat.

Tips:

  • Grease the waffle iron before cooking when making vegetable waffles.
  • Start with less flour and add more if the batter feels too thin.
  • Do not blend the batter for too long, as this can make the waffles tougher.
