Blueberry pie in the air fryer

In 4 minutes you get the pie perfectly crispy in the airfryer.

This is what you need

(Max 18 cm circumference)

Short pastry:

1 dl wheat flour
2 tbsp sugar
½ tsp vanilla sugar
50 g butter

    Alternatively, you can buy ready-made short crust pastry.

    Filling:

    Blueberry lemon curd
    2 tbsp lemon curd (recipe can be found here)
    3 tbsp frozen blueberries
    ½ tsp vanilla sugar
    Shortbread:
    ½ dl wheat flour
    1/3 tbsp caster sugar
    20 g butter

     

    How to do it

    1. Mix flour, sugar and vanilla sugar in a food processor or in a bowl.
    2. Finely chop the butter into the flour mixture and mix quickly into a dough.
    3. Line a pie tin with a removable bottom with the short crust pastry and prick the bottom with a fork.
    4. Fry in an air fryer at 200 degrees for 4 minutes.
    5. Mix the filling: blueberries, icing sugar, vanilla sugar and lemon pulp.
    6. Put the filling in the pre-baked pie tin.
    7. Make shortbread - mix flour and sugar in a bowl, add the butter and mix to a grainy mass.
    8. Top with short crust pastry and put in the airfryer at 200 degrees for 4 minutes.
