Breakfast waffle

Waffles for breakfast? Yes! These waffles don't spike your blood sugar, and are perfect for breakfast. If you skip the almonds, the waffles will be thinner.

This is what you need

  • 4 eggs
  • 2 dl coconut milk
  • 1 dl water
  • 2 dl ground almonds (can be omitted)
  • 1 tablespoon fiber husk
  • 40 g melted butter
  • a little salt

 

How to do it

  1. Whisk together all the ingredients
  2. Let the mixture stand for a few minutes so that the fiber husk has time to swell.

If you use a stick blender, you don't need to grind the almonds first.
