Caroline Berg Eriksen's waffle recipe for low-carb waffles.
This is what you need
- 400 grams of almonds (preferably scalded)
- 50 grams of butter
- 4 eggs
- 2 tsp fiber husk
- 1/2 tsp. salt
- 1 tsp baking powder
- 2 dl cream
- 1/2 dl milk
- 2 tablespoons of succin
- Cinnamon and vanilla powder
How to do it:
- Put the almonds in the blender, and process until it becomes almond flour.
- Melt the butter.
- Mix the almond flour with the butter and add the rest of the ingredients.
- Taste with both cinnamon (possibly cardamom) and sugar.
- The batter can quickly feel a bit thick, I recommend adding water if you want it thinner. I probably used approx. 1 1/2 dl. together.
- Let the batter stand for 10-15 minutes before using it, so that it swells.
If you have a Wilfa Powerfuel blender, you can make the entire mixture in the blender.
