Caroline Berg Eriksen's waffle recipe for low-carb waffles.

This is what you need

  • 400 grams of almonds (preferably scalded)
  • 50 grams of butter
  • 4 eggs
  • 2 tsp fiber husk
  • 1/2 tsp. salt
  • 1 tsp baking powder
  • 2 dl cream
  • 1/2 dl milk
  • 2 tablespoons of succin
  • Cinnamon and vanilla powder

  1. Put the almonds in the blender, and process until it becomes almond flour.
  2. Melt the butter.
  3. Mix the almond flour with the butter and add the rest of the ingredients.
  4. Taste with both cinnamon (possibly cardamom) and sugar.
  5. The batter can quickly feel a bit thick, I recommend adding water if you want it thinner. I probably used approx. 1 1/2 dl. together.
  6. Let the batter stand for 10-15 minutes before using it, so that it swells.

If you have a powerful blender, you can make the entire mixture in the blender.
