Creamy iced coffee with vegan caramel

This creamy iced coffee combines vegan caramel made from cashews and dates with chilled coffee for a perfect balance of indulgence and nutrition, entirely without refined sugar.

Ingredients

Vegan date caramel

  • 1 dl unsalted cashew nuts or cashew butter
  • 3 soft pitted dates
  • 0.5 dl water or plant-based milk, such as oat-almond
  • 1 tsp pure vanilla powder or vanilla extract
  • A small pinch of mineral salt

Iced coffee

  • 2 double espressos or 1.5–2 dl strong, chilled coffee
  • 2 dl plant-based milk, such as oat-almond
  • Ice cubes

Optional topping

  • A sprinkle of Ceylon cinnamon
  • A couple of whole cashew nuts for garnish
  • A little extra caramel on top

How to make creamy iced coffee with vegan caramel

  1. Make the caramel
    Rinse the soaked cashew nuts and put them in a blender together with dates, water or plant-based milk, vanilla and salt.
  2. Blend
    Blend until you have a smooth and creamy caramel sauce. Adjust to taste.
  3. Prepare the glasses
    Spread caramel sauce along the inside of the glasses. Use a mini hand mixer, dip it in the date syrup and run the hand mixer so the syrup sprays onto the inside of the glasses.
  4. Add ice and milk
    Fill the glass with ice cubes and pour in the plant-based milk.
  5. Add coffee
    Pour in the chilled coffee and stir gently.
  6. Top
    Sprinkle a little Ceylon cinnamon over the iced coffee and garnish with extra caramel if you like.
  7. Serve
    Serve straight away and enjoy.

  • Use organic dates and cashew nuts for the best gut-friendly effect.
  • Use cashew butter or soaked cashew nuts to break down anti-nutrients if you have an inflammation-related condition.
  • Coffee can boost gut movement and improve focus, but enjoy in moderation and preferably before 2 pm so it doesn’t disrupt your sleep.
  • Go for decaf if you notice caffeine raises your stress levels even early in the day.
  • The caramel is also lovely on smoothie bowls, porridge or as a dip for apple slices.
