All you need to make homemade nut butter is a blender, a handful of your favourite nuts and whatever flavour twist you prefer. It’s surprisingly easy and tastes delicious.
How to do it
- Roast the nuts on a baking tray lined with baking paper at 200 degrees for about 8 minutes, until golden.
- Leave to cool.
- Put the cashews in the blender.
- Start on low speed to mix, then increase the speed if needed. If the speed is too high, the cashews can stick to the sides of the jug – use a spatula or the tamper to push them back down so the blades can grab them. The cashews are first ground, then start to release their fat and turn thick, and after a while the mixture becomes more fluid and completely smooth.
- Blend until creamy. Depending on your blender, this takes about 5 minutes.
- Add salt, spices and your choice of sweetener. Blend well and taste to see if more salt or sweetness is needed.
Pour into a bowl or an airtight jar for storage. It keeps well for weeks at room temperature.
