These waffles have all the flavours of Easter. Orange waffles with lemon curd are a perfect treat for the holiday.

This recipe makes a generous batch of soft, delicious waffles with a delicate orange flavour. The waffles freeze well too, so you can defrost a few at a time and enjoy freshly thawed waffles throughout Easter, whether you are heading out for a walk or simply relaxing at home.

Lemon curd can be bought ready-made, but it is also very easy to make from scratch. It keeps well for several weeks when stored in the fridge.

Ingredients

For the orange waffles:

  • 5 large eggs
  • 175 g caster sugar
  • 200 g butter
  • 800 ml whole milk
  • 1 litre cultured buttermilk
  • 1 tsp bicarbonate of soda
  • 2 tsp baking powder
  • 1 tsp vanilla sugar
  • 640 g plain flour
  • 3 oranges

To serve

  • Homemade or shop-bought lemon curd
  • Icing sugar, if desired

For the lemon curd:

  • 4 egg yolks
  • 150 g caster sugar
  • 2 lemons
  • 100 g butter

How to make orange waffles with lemon curd

  1. Make the lemon curd the day before
    Place the egg yolks, sugar, finely grated lemon zest and freshly squeezed juice from the lemons in a heatproof bowl. Set the bowl over a pan of gently simmering water, making sure the base does not touch the water.
  2. Whisk until thick and creamy
    Heat the mixture gently, whisking constantly, until it becomes thick and creamy. Remove from the heat and stir in the softened butter a little at a time.
  3. Chill the lemon curd
    Leave it to cool completely in the fridge, preferably overnight. As it chills, it will thicken and become beautifully creamy.
  4. Make the waffle batter
    Whisk the eggs and sugar until pale, thick and airy. Pour into a large mixing bowl, then stir in the melted butter and milk.
  5. Add the dry ingredients and orange
    Add the bicarbonate of soda, baking powder, vanilla sugar and plain flour, and whisk until the batter is smooth and free from lumps. Fold in the finely grated zest and juice of the 3 oranges.
  6. Rest the batter
    Leave the batter to rest for 30 minutes.
  7. Cook the waffles
    Cook in a greased waffle iron over medium heat until golden.
  8. Serve
    Serve the waffles with homemade lemon curd, or simply with a dusting of icing sugar.

Tips:

  • This recipe makes a large batch of waffles, so it can easily be halved if preferred.
  • Homemade lemon curd is especially good, but a good-quality shop-bought version works well if you want to save time.
  • The orange waffles are also delicious served simply with a dusting of icing sugar.
  • The waffles freeze well, so you can thaw a few at a time and enjoy them throughout Easter.
