Use the flesh from your Halloween pumpkin to make a simple and delicious homemade pumpkin soup in your Powerfuel blender. Steaming hot and ready to serve after 6 minutes!
How to do it
- Scoop out the inside of the pumpkin and use the flesh. Keep the seeds – they can be dried and toasted.
- Mix the pumpkin flesh and carrots with rapeseed oil and cumin.
- Peel the garlic.
- Put the coconut milk, pumpkin, carrots, garlic and stock in the blender. Blend until completely smooth.
- If you use the Wilfa Powerfuel XL, let the blender run until the soup reaches the desired temperature – use the temperature gauge that comes with the blender. If your blender cannot heat the soup, pour it into a saucepan and heat it there.
- When the soup is hot, season with salt and pepper.
- Serve with toppings such as pumpkin seeds, basil and sour cream.
Tips
- Make your own pumpkin seeds: rinse the seeds from the pumpkin well, dry them and put them in a frying pan with a little salt. When they start to pop, they are ready.
- Halloween pumpkins are mainly grown for decoration, but they are fully edible. Hokkaido is a Japanese pumpkin variety that is great for soup – and the skin can be used too.
