Out of bread for Sunday breakfast or lunch? A scone dough is quick to whip up and bake in the air fryer. In this recipe we used the Dualfry with a chamber that can be divided in two, so the scones bake in one chamber while peach slices bake in the other.
How to make scones in the air fryer
-
Mix the dry ingredients
Combine the flour, sugar, vanilla sugar, baking powder and salt in a bowl. -
Rub in the butter
Cut the cold butter into cubes and add to the dry ingredients. Rub together by hand, or use the dough hooks of a hand mixer, until the mixture resembles coarse breadcrumbs. -
Make the dough
In another bowl, whisk the cream and egg with a fork. Pour into the dry ingredients and fold gently with a spoon or spatula until it just comes together. Do not overmix. -
Cut out
Turn the dough out onto a lightly floured surface and gently bring it together. Roll it out to about 2 cm thick and cut out round scones with a cutter or glass, 5–7 cm in diameter – or cut into triangles with a knife. Gather the leftover dough and repeat. -
Bake
Place the scones in the air fryer basket with some space between them – bake in batches if you have a smaller model. Brush with cream and bake at 180 °C for 12–15 minutes, until golden brown. -
Bake the peaches
If your air fryer has two chambers or a divided chamber, line the other chamber with baking paper and add nectarines or peaches cut into wedges. Sprinkle with light brown sugar, about 2 tsp per fruit, and top with a few slices of cold butter cut with a cheese slicer. Bake until the fruit is soft and the sugar has caramelised. -
Serve
Cool the scones on a wire rack for a few minutes. Serve with the baked peaches and cream, or with butter and a good jam.
