Recipe for sticky sticky cake with silky meringue.

You just have to try this cake! Dark and sticky cake with silky meringue, topped with strawberries. - What a delicious summer cake!

Scrap cake:

  • 150 grams of butter
  • 135 g (1.5 dl) sugar
  • 135 g (1.5 dl) brown sugar
  • 40 g (1 dl) baking cocoa
  • 1-2 teaspoons vanilla sugar
  • 120 g (2 dl) wheat flour
  • 2 eggs
  • 1 pinch of salt

How to do it:

Set the oven to ̊ 175 degrees hot air. Place baking paper in the bottom of a 20 cm diameter springform pan. Grease the bottom and sides.

Melt the butter in the microwave or a small saucepan. Place the butter in a large bowl. Add sugar, brown sugar, baking cocoa, vanilla sugar and salt. Stir everything well. Add the eggs and mix in the flour. Stir until there are no lumps. Pour the mixture into the mould.

Roast in the middle of the oven for 15-18 minutes.

It is important to follow the cooking time. As soon as it is firm on the top and no longer liquid, you can take it out of the oven. Fry it too little rather than too much and you will get the best consistency.

Take it out of the oven and let it cool.

Put it in the fridge for an hour or overnight. Then you get a delicious sticky consistency.

If possible, take it out of the fridge 2 hours before serving. So that the cake itself gets to room temperature before you put on the meringue. But you can also make it easy to prepare everything several hours before and keep it in the fridge. (I usually end up with that).

Meringue:

  • 4 egg whites
  • 1/4 teaspoon salt
  • 250 g of sugar

Decoration:

  • 1 packet of strawberries

How to do it:

Put the egg whites in a bowl. Make sure̊ that the bowl is completely clean and that you don't get any egg yolk. (This means that the meringue will not harden). Beat the egg whites together with a little sugar on low speed until foamy. When the foam starts to harden, add the sugar 2-3 tablespoons at a time. Whisk between each time. Then whip at full strength until you get a soft and shiny meringue. It takes approx. 5 minutes. You should be able to turn the bowl upside down without the meringue falling out, then it is ready.

Decorate the cake with meringue and strawberries.
