Healthy, good waffles with a wonderful green color from the spinach.
Spinach waffles can replace bread. It's healthy and good, and at the same time it's a great way to get spinach. The spinach gives a good color and the more you have in the batter, the greener the waffles will be. Make the waffle batter in the blender. Then you have the batter ready in 1-2-3 and if there is batter left, it takes up little storage space in the fridge.
Be aware that when you use oatmeal in the waffle batter, the batter will eventually become very thick. If you store it overnight in the blender, it is a good idea to stir with a spoon in the blender first, to avoid it becoming too heavy for the motor in the blender.
This is what you need
- 3 dl milk
- 3 eggs
- 70 g melted butter
- 2 dl oatmeal (can be replaced with rye)
- 2 dl sifted flour
- 2 tsp baking powder
- 120 g spinach or kale (can also use frozen)
- 1 banana
How to do it
- Pour all the ingredients into the blender in the order of the ingredients.
- Run the blender until it becomes completely smooth
- Let the batter swell for approx. 15 min.
- Preheat the waffle iron
- Pour the waffle batter into the iron with the provided ladle
- Fry
- Eat!
If you don't have a blender, you can finely chop the spinach, or use an immersion blender.
