Tiramisu is incredibly practical for parties as it can be made the day before, and only gets better after standing for a while.

This is what you need

  • 6 yolks from large eggs
  • 200 g sugar
  • 500 g mascarpone cheese
  • 4 dl heavy cream
  • 30 ladyfingers crackers
  • 2.5 dl strong coffee
  • 1 dl coffee liqueur
  • 30 g cocoa for sprinkling

How to do it

  1. Put egg yolks and sugar in a bowl and heat over a water bath while whisking. Whip until you have a light and fluffy cream, this job is made easier with a stick mixer with whisk. It takes about 10 minutes until you have a thick cream.
  2. Remove the cream from the heat and continue whisking to cool it faster.
  3. Stir in mascarpone cheese to a smooth cream.
  4. Whip the cream until creamy and fold into the mascarpone cream.
  5. Chill while you prepare the rest.

  6. Brew strong coffee and mix with coffee liqueur.
  7. Find a large and shallow bowl or small deep pan.
  8. Dip the biscuits quickly into the coffee and liqueur, and cover the bottom of the mold with biscuits.
  9. Add a layer of cream, spread out and add another layer of dipped biscuits.
  10. Continue until you have used up all the cookies and cream.
  11. Dry off with cream and cover with plastic wrap.
  12. Put in the fridge overnight.

Sprinkle on a layer of cocoa before serving and enjoy with a cup of freshly brewed coffee.
