Make a waffle cake for 17 May (Norway's Constitution Day) that both tastes good and is a feast for the eyes. Best of all, it's super easy to make.

How to make waffle cake

1. Bake the waffles
   Make the batter following your waffle recipe. Heat the waffle iron on high and bake enough waffle plates for a small tower.
2. Whip the cream
   Mix the cream with the icing sugar and whip to a fairly firm cream.
3. Add the vanilla cream
   Whisk in the ready-made vanilla cream. The cream does not split, and can be whipped quite firmly after adding the vanilla cream, giving you a smooth and firm cream.
4. Assemble the cake
   Layer waffle plates, cream and berries to the height you want.
5. Decorate
   Garnish with strawberries, raspberries, blueberries and edible flowers if you like. This cake is decorated with forget-me-nots, which are edible and bloom for quite a while in spring.
