This is what you need
Gives 10-12 cookies
- 2 egg whites
- 4 tbsp melted butter
- 1 dl rice flour
- 1 dl coconut sugar or other sweetener
- 1 tsp vanilla sugar or vanilla extract
- 0.5 dl oat drink or other milk
- 1 tsp grated orange peel
Chocolate glaze
- 80 g raw chocolate or dark chocolate
- 2 tbsp grated orange peel
How to do it
- Heat the waffle iron to level 6 or 6.5.
- Separate the egg white from the yolk, and pour in melted butter together with the egg whites.
- Stir together quickly.
- Add the dry ingredients and mix together.
- Add the milk.
- Stir in grated orange peel.
- Grease the waffle iron with 1 tablespoon of butter, pour in the batter and bake (approx. 3 min)
- Take the cookies out of the iron and cool on a wire rack so that they become hard Fry all the batter in this way.
- After the cookies have cooled, make the chocolate frosting.
Chocolate glaze
- Melt chocolate in a heat-resistant bowl in hot water.
- Dip the cookie in the melted chocolate and sprinkle with grated orange peel.
- Store the cookies in an airtight box in the fridge.
Note! The more sugar you have in the batter and the longer you bake the cookies, the crispier the result is.
