Waffle batter

This is what you need

  • Sour waffles
  • 100 g melted butter
  • 200 g cream cheese
  • 4 dl wheat flour
  • 1.5 tsp salt
  • 1 dl whole milk
  • 1 dl mineral water

How to do it

  1. Mix together the ingredients (except mineral water) and let the batter swell for a while, the batter should be sticky.
  2. When the batter has stood for 30 minutes, add the mineral water before you start frying

Skagenrøre

This is what you need

  • 1 kg shrimp
  • 125 g horseradish cream cheese
  • 1 dl sour cream/creme fraiche
  • 1 dl mayonnaise
  • (finely chopped red onion if you want)
  • Black pepper, salt, spring onions and herbs for decoration
  • Lemon at the end (do not mix with the filling!)

How to do it

  1. Mix the filling in a bowl, season with salt, pepper and spring onions. Note! Do not squeeze the lemon, as this will make the filling thin. It tastes good squeezing lemon on freshly made bread at the table 🍋
  2. Fry the waffles, divide the plates and place them on plates and spoon the filling onto the waffles.
  3. You can also add capers, pickles, eggs or red onions to the filling - roe also works wonderfully as a garnish.
