Easy to make and wonderfully good lunch or dinner. The waffle iron can be used for more than sweet waffles!
You need
Makes approx. 2 waffle plates in Bell waffle iron
- 2 medium-sized sweet potatoes
- 2 spring onions
- 4 eggs
- 1 tsp spices, e.g. pasta rossa spice mix
- ½ tsp garlic powder
- ½ tsp flake salt
- 150 g feta cheese
- A little butter for frying
How to do it
- Peel and coarsely grate the sweet potatoes, and cut the spring onions into strips. Place the sweet potato and spring onion in a large baking dish. Stir in the eggs together with the spices. Crumble over the feta cheese at the end and fold together.
- Heat the waffle iron and grease it with a little butter. Put half of the batter in the iron. The batter is not very runny so use a spoon to put the batter all over the iron so there is an even layer of sweet potato. Bake until the potatoes are soft and the waffle is golden and crispy.
- While the waffles are baking, you can prepare the topping. Place the waffles straight on plates and top with a delicious topping of your choice, serve immediately.
