Waffle tacos

Taco waffles? Really? Yep! If you think about it, a wheat tortilla contains almost the same ingredients, apart from egg and baking powder. Taco waffles are a fun twist that makes the meal go further – perfect if you want your taco leftovers to stretch to an extra meal, for lunch or another easy dinner.

How to make taco waffles

  1. Melt the butter
Melt the butter and set it aside.
  2. Mix the batter
Mix the dry ingredients, then stir in the melted butter, eggs and milk until you have a smooth batter with no lumps. You can also use a hand mixer or a stand mixer.
  3. Prepare the filling
Place the waffle iron and the batter on the table together with your taco leftovers. If you have seasoned minced beef or black beans from the day before, heat them in a frying pan.
  4. Cook the waffles
Cook the waffles at the table until golden and ready to serve.
  5. Serve
Eat them warm, topped with the taco leftovers.

Tips:

  • Put the waffle iron on the table and cook while everyone is sitting together.
  • Seasoned minced beef and black beans both work well as toppings.
  • A great way to make taco leftovers stretch to an extra meal.
