Wholesome and tasty oat waffles that make a great substitute for bread – for breakfast, packed lunches and evening meals.

How to make oat waffles

  1. Mix the dry ingredients
Mix together the oats, wheat flour, baking powder and cardamom.
  2. Add the milk
Stir in the milk until you have a smooth batter with no lumps.
  3. Add egg and fat
Mix in the beaten eggs and the margarine or oil.
  4. Rest and cook
Leave the batter to stand and swell for at least 15 minutes before cooking the waffles.

Tips:

  • You can easily make the batter in a blender. First add the oats and run the blender until they become oat flour. Then pour in all the liquid and blend again. Add the remaining dry ingredients and blend until the batter is smooth.
  • If you keep the batter in the fridge, it will thicken. Add more milk before cooking. If the batter is in the blender jug, stir it with a spoon, as it will probably be too thick for the blender.
  • Oats give the waffles a good flavour and texture. Feel free to use oil or liquid margarine, or melted plant-based margarine.
  • Coarse waffles can be harder to release from the waffle iron, so it can be a good idea to grease the iron before adding the batter. Cook the waffles thoroughly so they don't split or stick to the iron. Lift the lid carefully to see if the waffle comes loose – if not, let it cook a little longer.
