Impress with a simple, rustic, and last but not least, delicious waffle cake!
This is what you need
Makes 3 - 4 waffle plates
- 6 eggs
- 2 dl coconut milk
- 5 tbsp coconut oil or other oil
- 5 tbsp honey
- 1 dl coconut flour or other type of flour
- 1 dl cocoa
- 1.5 tsp baking powder
How to do it
- Whisk eggs, coconut milk, oil and honey to a fluffy/foamy mixture.
- Mix the dry ingredients in a separate bowl.
- Mix the wet into the dry and mix carefully.
- Heat the waffle iron to level 6.
- Grease a little oil in the waffle iron. Pour batter into the iron and cook for around 2 minutes.
- Put the waffles on a wire rack and cook the rest in the same way.
Make Coconut Cream
- Make coconut cream to use between the layers and on top of the cake.
- Take part of the thick mass from the cold can of coconut milk in a bowl, add vanilla sugar and honey and whisk until the mixture becomes fluffy.
- Put the coke cream in the fridge while you fry the waffles.
When all the waffles are baked, build a cake with whipped cream and banana between each layer. Spread a layer of whipped cream on top and top it all with berries and grated chocolate.
