Try tangy waffles made with cream cheese, topped with a classic Swedish skagenröra – a creamy shrimp mix with horseradish, sour cream and mayonnaise. Perfect for lunch, a party or a weekend treat.
How to make waffles with skagenröra
-
Make the batter
Mix all the batter ingredients except the mineral water and let the batter rest for about 30 minutes. The batter should be sticky. -
Add the mineral water
When the batter has rested, stir in the mineral water just before you start baking. -
Make the skagenröra
Mix the shrimp, horseradish cream cheese, sour cream and mayonnaise in a bowl, and add finely chopped red onion if you like. Season with salt, pepper and spring onion. Note: do not squeeze lemon into the mixture, as this will make it runny. -
Bake and serve
Bake the waffles, divide the waffle plates and place them on plates. Spoon the skagenröra onto the waffles and garnish with spring onion and herbs. Serve with lemon wedges to squeeze over at the table.
Tips:
- You can also add capers, pickles, egg or red onion to the topping.
- Fish roe also works wonderfully as a garnish.
