These waffles are made for cheese lovers. They turn out thick, rich and full of bold Parmesan flavour.

Serve them warm and freshly cooked with marmalade for a delicious sweet and savoury combination. Parmesan waffles are also a fun and unusual addition to a cheese board, perfect if you would like to try something a little different.

Ingredients

  • 150 g plain flour
  • 175 g butter, melted
  • 600 ml milk
  • 1 tsp baking powder
  • 1 tsp vanilla sugar
  • 200 g fresh Parmesan, finely grated

To serve

  • Orange marmalade or another marmalade
  • Parmesan or another cheese

How to make Parmesan waffles

  1. Make the batter
    Mix the flour with the melted butter, milk, baking powder and vanilla sugar. Stir until the batter is smooth and free from lumps. It should be fairly thick.
  2. Add the cheese
    Finely grate the Parmesan and stir it into the batter.
  3. Cook the waffles
    Cook the waffles over medium heat until golden.
  4. Serve straight away
    Serve while still hot for the best flavour and texture.

Tips:

  • It is correct that there are no eggs in this recipe. The batter is quite thick, and the waffles will also be fairly thick and compact.
  • These waffles are rich and filling, exactly as they are meant to be, so you probably will not eat many in one go.
  • As they are quite rich, they are best served warm and freshly cooked.
  • They taste especially delicious with a slightly sharp orange marmalade, though other jams work well too.
  • Use freshly grated Parmesan of good quality for the best flavour. The recipe can also be varied with other types of cheese.
