Drowned mocha ice cream

This coffee ice cream is the perfect treat for coffee lovers. With an ice cream maker you get a fantastic, creamy texture, and there are no limits to the flavours you can make when the ice cream is homemade.

Ice cream "drowned" in strong coffee – affogato – is an Italian classic. With mocha ice cream and freshly brewed filter coffee, this classic gets a Scandinavian twist.

How to make drowned mocha ice cream

  1. Heat the milk
Heat the milk and cream in a heavy-based saucepan until steaming.
  2. Whisk the egg yolks
Whisk the egg yolks, sugar and vanilla sugar together. Then whisk in the warm milk, a little at a time.
  3. Make the custard
Pour the mixture back into the pan and stir in the coffee, cocoa and 150 g of the chocolate. Heat over medium heat, stirring, for 8–10 minutes until it thickens. Do not let it boil.
  4. Chill
Pour into a bowl, cover with cling film and chill in the fridge.
  5. Churn
Churn the custard into ice cream in an ice cream maker, adding the chopped chocolate towards the end.
  6. Freeze
Transfer to a plastic container and freeze for at least 3 hours before serving.
  7. Serve
Scoop the ice cream into a heatproof glass, cup or bowl. Pour over hot, strong filter coffee and enjoy immediately.
